Hedge Recipes

We have been collecting recipes for a few years now.

In this section you will find some of our favorites and some that have been sent in by our Tree Wardens. We have grouped them under their main ingredient to make it easy to find what you are looking for.

Marron glacé

These take a while to make but are well worth the effort as they make great Christmas presents.

Quince Jelly

Quince is a fruit that does not have an apparent obvious appeal; it is hard and sour. However it makes a delicious jelly.

Wild Cherry Jam

Look out small wild cherries from May - the fruit can vary in colour from red to dark purple and make a lovely jam.

Sloe Gin

Look out for sloes in the hedgerow from September, pick when they are  black - some say after a frost is best.

Gin Sloe Chocolate

Don’t  discard your gin soaked sloes once your sloe gin is bottled - make these delicious treats.

Elderflower Fritters

Delicious these fritters will make you want more. Look out for the white flower blossoms in hedges. 

Elderflower Strawberry Cordial

A tasy and satisfying drink. Look out for the white flower blossoms in hedges in May and June. 

Elderflower Fizz

A lovely fresh sparkling drink - pick flowers first thing in the morning for maximum fragrance.
